低碳岩烤芝士蛋糕 low carb grill cheese cake


我是LCHF低碳饮食者,但是很喜欢这个蛋糕,不能够这样放纵吃高碳蛋糕 ,所以改了食谱做成低碳的,解馋一下也好 XD

当然这个食谱没原食谱高碳来的组织棉细,没有糖的美味,但是咸咸的盐也不错呀 XD



工具:5寸平模 ,5' cake mould


A
融化牛油 melted butter28g
全蛋 whole egg 26g

B
杏仁粉 almond  flour30g
无铝发粉 Aluminium free baking powder 1/2 茶匙
蛋黄 egg yolk 35g

C
蛋白 egg white 85g
赤藻糖醇 Erythritol 10g
塔塔粉 Cream of tartar 1/2茶匙
海盐 salt 少许


做法:



1.首先把A的材料放在碗里
1.Ingredient A put in empty bow.


2.充分搅拌均匀
2.mix it well


3.加入材料B 的杏仁粉
3.put in almond flour


4.搅拌均匀
4.mix well


5.加入一粒蛋黄,充分搅拌均匀 才加入另外一粒.然后混合均匀
5.add in egg yolk one by one mix it well


6.蛋黄糊好了,备用
6.egg yolk paste done, and set  aside

开始准备蛋白霜咯 start prepare meringue potion





7.蛋白放入一个 无水无油干净的大碗里,确保所以器材也是无水无油
7.Egg white pun in a clean bow with no water or oil


8.打发到粗泡泡加入塔塔粉
8.Add in cream of tartar when u saw it become coarse bubbles


9.把赤藻糖醇和盐加入.继续打发到湿性发泡
9.Add in erythritol and salt,mix well till 80%


10.这个就是湿性发泡的样子,有长长的尾巴的

11.拿1/3的蛋白霜,放入蛋黄糊
11.take 1/3 meringue paste  into  egg yolk paste


12.混合均匀
12.mix it well.


13.然后把混合好的蛋黄糊倒回去剩下的蛋白霜里
13. put back the mixture into meringue paste.


14.轻轻的混合均匀
14.mix it well


15.混合好了(感觉消泡了  我的功夫不到家.... )
16.done


16.倒入5寸平模, 记得下面不要放烘焙纸
16.put in 5' cake mould, dun put baking paper


17. 敲出空气
17.knock out the air


18.放入SKG烤炉,预热上火150C度,下火130C度,烘烤 8-10min,然后上火换成90C度,下火150C度烘烤 17min或直到熟
18.send to SKG preheat oven with up temp 150C, and below is 130C for 8-10min, after change the up temp to 90 C and below temp change to 150C for 17min or until bake.

19.烘烤好了,马上丢几下在桌上
19.after bake ,knock out the air on he table few time


20.倒扣直到完全凉
20.back off until completely cooled


21.送入冰冻格,倒扣一晚
21.pun it on frozen sit for one night

第二天
second day


有盐奶油 salted butter 18g
cheddar Cheese 20g
动物性奶油 whipping cream 18g 



1.直接从冰箱拿出来,脱模
2.take out from frozen and demould


2.把材料放在碗中,隔水煮融化
2.Place the ingredient into bow ,boiled melting


3.开小火慢慢搅拌煮融
3.A small fire slowly stir cook


4.煮好了
4.done


5.马上淋在蛋糕上
5.Immediately pun on cake


6.抹好了芝士酱
6.Complete with cheese paste


7.上火250度烘烤6-7min 或呈现一点焦黄,即可
7.Up temp 250C bake for 6-7min or untill a bit golden.


8.完成了,凉了冷藏冰箱隔天才吃会更加美味,最多冷藏4天
8.Done ,Cool the freezer to eat the next day will be more delicious, refrigerated 4 days at most
